These venison breakfast smashburgers are loaded with flavor from ground venison, crispy bacon, melted cheddar, and a fried egg on a toasted bun. Ready in just under 30 minutes, they’re the perfect wild game meal for breakfast, lunch after the hunt, or a hearty dinner at camp. Simple, satisfying, and always a crowd-pleaser.

Ingredients

  • 1 lb ground Venison
  • Steak seasoning, To Taste
  • 4 slices Bacon
  • 4 large Eggs
  • 4 slices Cheddar Cheese
  • 4 Burger Buns
  • Butter or Oil, for Cooking

Instructions

  1. Divide venison into 4 quarter pound meatballs.
  2. Heat griddle over medium-high heat and add bacon slices. Cook the bacon until crisp, then remove and set aside. If you have a two burner griddle, keep one side on low to keep food warm as you cook. 
  3. Place four venison meatballs into four sections of the griddle, smashing them with a spatula or burger press until thin. Season with steak seasoning and cook 2–3 minutes per side until browned and cooked through. Season other side after the flip. Top each patty with a slice of cheese during the last minute to melt. Move burgers to the low heat side.  
  4. Fry the eggs sunny-side up or over-easy. Move to the low heat side to keep warm. 
  5. Lightly toast the buns. 
  6. Assemble the burgers by placing the venison patty with melted cheese on the bottom bun, then bacon, fried egg, and top bun. Serve immediately with condiments of choice. Makes 2 double patty burger or 4 single patty burgers.
