One Pot Creamy Tuscan Pasta

This One Pot Creamy Tuscan Venison Pasta is a rich and hearty wild game recipe made with sun-dried tomatoes, spinach, garlic, and Parmesan cheese. Quick enough for a weeknight dinner but flavorful enough to impress, this creamy venison pasta is the perfect comfort food with a wild game twist.

  • 2 tbsp butter, divided
  • 1lb ground venison
  • 1 medium onion, diced
  • 2 tsp garlic powder, divided
  • 2 tsp onion powder, divided
  • 2 tsp Italian seasoning, divided
  • 1 tsp paprika, divided
  • 1 tsp salt, divided
  • 1/2 tsp black pepper
  • 1 tablespoon minced garlic
  • 1/3 cup sun-dried tomatoes, roughly chopped
  • 2 tbsp tomato paste
  • 1 tbsp oil from sun-dried tomatoes
  • 12 oz Campanelle pasta (or Rotini, Penne, or Shells)
  • 2 cups milk
  • 2 cups beef broth
  • 2 cups spinach, packed
  • 1 cup grated Parmesan cheese

Instructions

  1. In a deep skillet or pot, add in one tablespoon of butter and allow to melt. Add venison and cook ground venison and diced onion over medium-high heat. Break it into small pieces and cook for 5 minutes. Season with 1 tsp garlic powder, 1 tsp onion powder, 1 tsp paprika, 1/2 tsp salt, and 1/2 tsp black pepper.
  2. Add remaining butter, then garlic, sun-dried tomatoes, oil from the tomatoes, and tomato paste. Cook for a few minutes until fragrant.
  3. Stir in uncooked pasta, beef broth, milk, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp Italian seasoning, and 1 1/2 tsp salt. Spread pasta evenly in the pot.
  4. Bring to a simmer, cover, and cook for 10-12 minutes on medium-low heat (stir as needed).
  5. Stir in spinach until wilted. Remove from heat and mix in Parmesan cheese. Serve with additional Parmesan on side if desired and enjoy!
