Sweet and Sour Duck

Crispy duck glazed in a sweet and sticky sauce that is out of this world. Serve over a bed of rice for the perfect weeknight meal.

Ingredients

  • 1 pound Duck Breasts Skin Removed, Cut Into Bite Sized Pieces (1 inch)
  • Salt and Pepper, To Taste
  • ⅓ cup Rice Flour or All Purpose Flour
  • ¼ cup Corn Starch
  • 2 tablespoons Soy Sauce
  • 1 tablespoon MInced Garlic
  • ⅓ cup Soda Water (Cold)
  • 1 Egg
  • 1 Small Onion, Chopped
  • 1 Red Bell Pepper, Chopped
  • 1 Green Bell Pepper, Chopped
  • Oil, For Frying
  • Rice For Serving (Optional)
  • Green Onions, To Garnish (Optional)
  • Sesame Seeds, To Garnish (Optional)

Sweet and Sour Sauce

  • 1 cup pineapple juice
  • ½ cup brown sugar
  • ⅓ cup rice wine vinegar
  • 3 tablespoons ketchup
  • 2 tablespoons soy sauce
  • 3 tablespoons cornstarch

Instructions

  1. Cut duck breast into 1 inch pieces then season with salt and pepper to taste.
  2. In a large bowl, combine flour, corn starch, soy sauce, minced garlic, soda water and egg. Whisk together then set duck into the marinade and mix well. Rest for 15-20 minutes.
  3. While you’re waiting, chop vegetables and mix together sauce ingredients.
  4. To a large saucepan, add in one tablespoon of neutral cooking oil or butter. Add in chopped onion and bell peppers. Sauté for 2 minutes. Pour in sauce and let simmer while you prepare the duck.
  5. In a separate pan, add in frying oil. You’ll need enough so that the duck is covered, approximately 2-3 inches. Once the oil is hot (about 350 degrees), add in duck and fry for about 3 minutes until golden brown and cooked through. Be careful to not overcook.
  6. Add duck to the sauce and mix well. Serve over a bed of rice (if desired), garnished with green onions and sesame seeds.
