Cajun Grouse Sandwich

These easy crispy Cajun sandwiches are so tasty and the best part is, you can make them with grouse, pheasant, or any other upland bird you have in your freezer.

Ingredients

Scale
  • 4 grouse breasts
  • 1 teaspoon paprika
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¾ cup flour
  • 3/4 cup buttermilk
  • Cooking Spray
  • 4 Brioche Buns

Cajun Mayo:

  • ¾ cup mayonnaise (Use a good brand- Like Dukes!)
  • 1 tablespoon Louisiana hot sauce
  • 1 tablespoon lemon juice
  • 1 teaspoon Cajun seasoning

Optional Toppings:

  • Tomatoes
  • Pickles
  • Lettuce

Instructions

  1. In a small bowl, mix together the paprika, Cajun seasoning garlic powder, onion powder, salt, and black pepper.
  2. In a shallow dish, mix together the buttermilk and 1 teaspoon of the spice mixture.
  3. In another shallow dish, mix together the flour and the remaining spice mixture.
  4. Dip the grouse into the buttermilk mixture, making sure they are coated evenly. Dredge the grouse in the flour mixture, shaking off any excess.
  5. Preheat the air fryer to 400 degrees F.
  6. Place the coated grouse strips in the air fryer basket in a single layer. Lightly spray the grouse with cooking spray.
  7. Cook the grouse for about 10-13 minutes, or until it is cooked through and golden brown. Flip halfway.
  8. While the grouse is cooking, mix together the ingredients for the Cajun mayo.
  9. Once the grouse is fully cooked and crispy, place on a toasted bun with the Cajun mayo and your favorite sandwich toppings.
