Air Fryer Cajun Grouse Sandwich
These easy crispy Cajun sandwiches are so tasty and the best part is, you can make them with grouse, pheasant, or any other upland bird you have in your freezer.
Topped with a healthy serving of Cajun mayo, these crispy grouse sandwiches are a hit for any weeknight meal. Grouse are the perfect sandwich size bird, so it’s hard not to use this recipe every time we have a successful hunt. I’ve also use this same recipe with pheasant breast but you can use whichever upland bird you hunt, or even chicken.

The Cooking Process:
- Seasoning the grouse: We’re using a lot of seasonings here but the combination of paprika, Cajun seasoning, garlic powder, onion powder and salt and pepper greats a flavor explosion.
- Dredging stations: We’ll mix half our our seasonings with buttermilk and in a separate container we will mix the remaining half of our seasonings with flour. Then we’ll dip our grouse breasts into the buttermilk mixture then into the flour mixture.
- Frying: the grouse breasts will get air fried to a crispy perfection. If you prefer to deep fry, preheat your oil of choice to 350degrees, then air fry the grouse until the internal temperature reaches 165degrees.
- Assemble the sandwich: place your air fried grouse onto a toasted bun with your favorite sandwich toppings and a healthy serving of the Cajun mayo.

Ingredients
- 4 grouse breasts
- 1 teaspoon paprika
- 1 teaspoon Cajun seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¾ cup flour
- 3/4 cup buttermilk
- Cooking Spray
- 4 Brioche Buns
Cajun Mayo:
- ¾ cup mayonnaise (Use a good brand- Like Dukes!)
- 1 tablespoon Louisiana hot sauce
- 1 tablespoon lemon juice
- 1 teaspoon Cajun seasoning
Optional Toppings:
- Tomatoes
- Pickles
- Lettuce
Instructions
- In a small bowl, mix together the paprika, Cajun seasoning garlic powder, onion powder, salt, and black pepper.
- In a shallow dish, mix together the buttermilk and 1 teaspoon of the spice mixture.
- In another shallow dish, mix together the flour and the remaining spice mixture.
- Dip the grouse into the buttermilk mixture, making sure they are coated evenly. Dredge the grouse in the flour mixture, shaking off any excess.
- Preheat the air fryer to 400 degrees F.
- Place the coated grouse strips in the air fryer basket in a single layer. Lightly spray the grouse with cooking spray.
- Cook the grouse for about 10-13 minutes, or until it is cooked through and golden brown. Flip halfway.
- While the grouse is cooking, mix together the ingredients for the Cajun mayo.
- Once the grouse is fully cooked and crispy, place on a toasted bun with the Cajun mayo and your favorite sandwich toppings.
