The perfect smoked wild turkey breast every time. Did I mention how easy this recipe is to make?

1 Wild Turkey Breast
2 tablespoons Mustard
1.5–2 tablespoons Barbecue Rub
1.5–2 cups Barbecue Barbecue Sauce, Divided
Brine (Optional)
1/2 cup Brown Sugar
1/4 cup Kosher Salt
4 cup Cold Water
Instructions
Optional: To brine the wild turkey breast, combine water, salt and sugar in a large bowl and stir until mostly dissolved. Add turkey breast to the bowl adding additional water if needed to submerge. Brine for 12-24 hours. Once the brine time is complete, rinse thoroughly and dry with paper towels.
Brush mustard (or olive oil, whichever is your preferred binder) all over the wild turkey breast in a thin layer. Season the wild turkey breast well with your barbecue rub on all sides. Allow to sit while you preheat the smoker.
Preheat your smoker to 250 degrees.
Once preheated, place the turkey breast into your smoker and smoke until the internal temperature of the breast reaches 160 degrees, about 2 -2.5 hours depending on the size of the breast. Every 30 minutes while it cooks, brush both sides with barbecue sauce, flipping each time.
Once the internal temperature reaches 160 degrees, remove the turkey breast from the smoker and tent loosely with foil and rest for 10-15 minutes. This will continue cooking the turkey breast to 165 degrees.
