The perfect smoked wild turkey breast every time. Did I mention how easy this recipe is to make?

Ingredients
- 1 Wild Turkey Breast
- 2 tablespoons Mustard
- 1.5–2 tablespoons Barbecue Rub
- 1.5–2 cups Barbecue Barbecue Sauce, Divided
Brine (Optional)
- 1/2 cup Brown Sugar
- 1/4 cup Kosher Salt
- 4 cup Cold Water
Instructions
- Optional: To brine the wild turkey breast, combine water, salt and sugar in a large bowl and stir until mostly dissolved. Add turkey breast to the bowl adding additional water if needed to submerge. Brine for 12-24 hours. Once the brine time is complete, rinse thoroughly and dry with paper towels.
- Brush mustard (or olive oil, whichever is your preferred binder) all over the wild turkey breast in a thin layer. Season the wild turkey breast well with your barbecue rub on all sides. Allow to sit while you preheat the smoker.
- Preheat your smoker to 250 degrees.
- Once preheated, place the turkey breast into your smoker and smoke until the internal temperature of the breast reaches 160 degrees, about 2 -2.5 hours depending on the size of the breast. Every 30 minutes while it cooks, brush both sides with barbecue sauce, flipping each time.
- Once the internal temperature reaches 160 degrees, remove the turkey breast from the smoker and tent loosely with foil and rest for 10-15 minutes. This will continue cooking the turkey breast to 165 degrees.
