Buffalo Wild Turkey Taquitos

I am a huge buffalo lover. So this recipe always stays in my favorites. This works great as a game day party appetizer or for dinner. If you’re not a turkey hunter, can substitute the wild turkey for pheasant, or even chicken.

This is a great way to use leftover wild turkey. If you don’t have any wild turkey left over- I can’t blame you there. Take a wild turkey breast and cook it in a crock pot with chicken broth on low for about 8 hours. It’ll be nice and tender and ready to use for this recipe while you’re busy during the day.

Making Taquitos isn’t as hard as it may seem. First you will combine shredded wild turkey, paprika, hot sauce, ranch, cream cheese, and bleu cheese in a large bowl. Then you will simply roll them up and wah-lah! Then you’ll bake them until they’re crisp and golden. So delicious and so EASY!

One of my favorites! These buffalo wild turkey Taquitos are the perfect appetizer to impress your friends or for a weeknight dinner. The filling is out of this world!

Ingredients

  • 12 Fajita Sized Flour Tortillas
  • 3 cups shredded and cooked Wild Turkey
  • 1/2 cup Franks Buffalo Hot Sauce
  • 1/3 cup Ranch Dressing
  • 4 ounces Cream Cheese (softened)
  • 1 teaspoon Paprika
  • 1/3 cups Bleu Cheese Crumbles (plus more for garnish)
  • Cooking Spray
  • Sliced Green Onions (for Garnish (Optional))

Instructions

  1. Preheat oven to 450°F and line a baking sheet with foil.
  2. In a large mixing bowl, combine shredded wild turkey, paprika, hot sauce, ranch, cream cheese, and bleu cheese.
  3. Place about 2 1/2 tablespoons of the turkey filling in a line across the tortilla. Start at the bottom edge; roll the tortilla up towards the top, rolling it up into a cigar-like shape.
  4. Place on prepared baking sheet and repeat with this process with the remaining tortillas and filling. Spray with cooking spray.
  5. Bake in preheated oven for 10 minutes. Flip the taquitos over and bake another 3-5 minutes until golden brown.
  6. Serve garnished with bleu cheese crumbles and green onions if desired
