Venison Big Mac style Sloppy Joes – sooo good and Venison Big Mac style Sloppy Joes - sooo good and on the table in 25 minutes with the @campchef pro 14!

Ingredients
1 lb ground venison 
½ small onion, finely diced
Salt and Black Pepper, To Taste 
4–6 hamburger buns 
4-6 slices Cheese (Cheddar, Pepper Jack or American)
Pickles, To Garnish (optional)
Sliced Tomato, To Garnish (optional)
For the Big Mac Sauce:
½ cup mayonnaise
2 tbsp ketchup
1 tbsp yellow mustard
2 tbsp chopped dill pickles or relish

Instructions
1. In a small bowl, mix together mayo, ketchup, relish, mustard, vinegar, garlic powder, and onion powder. Cover and set aside.
2. Heat a cast iron skillet over medium heat. Add in a small amount of oil or butter if needed. Add diced onion and ground venison and cook until browned and fully cooked through, breaking it apart with a spatula as it cooks. 
3. Stir in half of the Big Mac sauce into the cooked venison mixture. Mix well then add cheese and mix for 2–3 minutes to let the cheese melt and the flavors blend.
4. Serve on a toasted bun your favorite burger toppings and additional Big Mac sauce if desired.

Venison Fajita Mac and Cheese – seriously so good! Venison Fajita Mac and Cheese - seriously so good!

INGREDIENTS 
1 lb venison steak (thinly sliced)
1 tablespoon olive oil
1 packet fajita seasoning
2 bell peppers, sliced (assorted colors)
1 medium onion, sliced
3 ½ cups chicken or beef broth
12 oz elbow macaroni, uncooked
1 cup milk
2 ½ cups shredded cheese
½ cup sour cream (optional)
Optional toppings: jalapeños, cilantro, 

INSTRUCTIONS
1. Slice venison thin against the grain. Sprinkle with 2 teaspoons of the fajita seasoning and mix until strips are well coated.
2. Heat oil in a deep skillet or pot and sear the strips quickly over high heat just until browned on both sides, 1–2 minutes. Remove from skillet and set aside.
3. In the same skillet, add peppers and onions and sauté until softened, about 5 minutes.
4. Stir in remaining seasoning, uncooked macaroni, and broth. Bring to a boil, then reduce to a simmer, stirring often so the pasta doesn’t stick. Cover and simmer 10–12 minutes, until pasta is al dente and most liquid is absorbed.
5. Stir in milk and cheese until melted and creamy. If using sour cream, fold it in here. Add back the venison and mix well until warmed through.
6. Spoon into bowls and top with cilantro and jalapeños

Venison Philly Cheesesteak Shotgun Shells- the vir Venison Philly Cheesesteak Shotgun Shells- the viral shot gun shell recipe just got better!

Ingredients 
1 lb venison (or finely chopped venison steak)
10-12 manicotti shells (uncooked)
1 small onion, diced
1 green bell pepper, diced
1 small red bell pepper, diced
2 cloves garlic, minced
1 Tbsp Worcestershire sauce
1 tsp smoked paprika
1 tsp kosher salt
½ tsp black pepper
1 cup shredded provolone cheese 
1 cup shredded mozzarella cheese
½ cup cream cheese, softened
10-12 slices bacon

For the cheese drizzle/dip:
8 oz Cheez Whiz (or substitute for 8 oz shredded cheddar/provolone blend)
1/4 cup heavy cream
1 tbsp butter
1/2 tsp garlic powder

Instructions
1. Make the Filling:

In a large bowl and ground venison, onions and peppers, garlic, Worcestershire, paprika, salt, and pepper, cream cheese, provolone, and mozzarella until well combined but not overmixed.
Stuff the Shells:

Fill uncooked manicotti shells with the venison mixture (a piping bag helps). Wrap each with a slice of bacon and refrigerate 4 hours or overnight to let the pasta soften. Smoke or Bake:
Cook at 250°F for 1½–2 hours, until bacon is rendered and shells are tender. Raise heat to 375°F for 5–10 minutes to crisp the bacon.
Make the Cheese Sauce:

Melt cheese, cream, butter, and garlic powder in a saucepan over low heat until smooth and pourable.
Serve:

Drizzle cheese sauce over the shotgun shells or serve as a dip.

Smoked Venison Meatloaf with a Brown Sugar Bbq Gla Smoked Venison Meatloaf with a Brown Sugar Bbq Glaze 🤤 This is the BEST meatloaf recipe I’ve made yet!

Dont forget to ‘Fuel Your Flavor’ with @bearmountainbbq . It starts with premium hardwood pellets, crafted for a clean, consistent burn. This Maple Bourbon Pecan pellet blend specifically compliments this recipe because they bring a balance of sweet, nutty, and slightly smoky flavors that complement lean wild game.

Ingredients:
* 2 lbs ground venison
* 1 cup panko breadcrumbs
* 2 eggs, lightly beaten
* 1 small onion, finely diced
* 1 red bell pepper, finely diced
* ½ cup shredded cheddar cheese (optional, kid-friendly twist)
* ⅓ cup milk
* 3 cloves garlic, minced
* 2 tbsp Worcestershire sauce
* 1 tbsp smoked paprika
* 2 tsp dried Italian herbs
* 2 tsp salt
* 1 tsp black pepper
For the glaze:
* ½ cup BBQ sauce 
* 2 tbsp brown sugar
* 1 tbsp Dijon mustard

Instructions:
1. Preheat pellet grill to 275°F with Bear Mountain Maple Bourbon Pecan pellets.
2. In a large bowl, combine all meatloaf ingredients. Mix gently until just combined—don’t overwork the meat.
3. Shape mixture into a loaf and place on a wire rack or directly on a foil-lined sheet pan for easy transfer.
4. In a small bowl, whisk together BBQ sauce, brown sugar, and Dijon. Brush half over the meatloaf.
5. Place meatloaf on the pellet grill and smoke until internal temperature reaches 160°F (about 1.5 hours). It will continue cooking while resting. 
6. Brush remaining glaze on during the last 15 minutes of cooking.
7. Rest for 10 minutes before slicing and serving.
