Ingredients 
8-10 venison hot dogs, depending on size
2 sheets puff pastry, thawed
1 egg
1 tablespoon water
Nonstick spray or parchment paper

Everything Bagel Version
Everything bagel seasoning, to taste

Cheese-Stuffed Version
4–6  cheddar, pepper jack, or mozzarella

Cheese + Jalapeño Version
Shredded cheddar or pepper jack 
1–2 fresh jalapeños, thinly sliced

You Will Also Need:
Pellet Grill 
@bearmountainbbq Maple Bourbon Pecan Pellets

Instructions
1. Preheat pellet grill to 375°F with Bear Mountain maple bourbon pecan pellets. Line or grease a grill-safe tray.
2. Lightly roll puff pastry. Wrap venison hot dogs with pastry and trim remaining after hot dog is covered.
3. Make the Bucks in a Blanket:
• Original – wrap and seal with egg wash
• Everything – egg wash + seasoning on top
• Cheese – add cheese inside before rolling
• Cheese & Jalapeño – add both, then top with jalapeño slices
4. Cut each into 3–4 bite-size pieces and place seam-side down. Brush tops with egg wash.
5. Grill 18–22 min, rotating halfway, until golden and bubbly. (Watch the bottoms!)
6. Rest 2 minutes and serve with your favorite dips.

Cold weather calls for hot, hearty meals — and thi Cold weather calls for hot, hearty meals — and this Creamy Venison & Potato Chowder might be the coziest wild game soup I’ve made yet.

Ingredients: 
2–3 slices bacon, chopped 
2 tsp all-purpose seasoning, divided 
1 lb ground venison 
1 small onion, diced 
3–4 potatoes, diced ½-inch 
3 cups chicken broth 
1 can (10.5 oz) cream of chicken OR cream of mushroom 
½ cup frozen corn 
½ cup shredded cheddar (plus more for serving) 
Green onions (optional)

Directions: 
1. Cook bacon until crisp; remove and set aside, leaving grease in the pot.  Once cooled, crumble into pieces.
2. Brown venison in bacon grease with half the seasoning, more or less to taste. Add onion and cook until softened. 
3. Stir in potatoes, broth, cream soup, and remaining seasoning. Simmer 25 minutes, until potatoes are tender. 
4. Stir in corn and cheddar. 
5. Serve warm topped with chopped bacon, cheese, and green onions.

VENISON MEATBALLS WITH CREAMY MUSHROOM GRAVY

MEATBALL INGREDIENTS
• 1 lb ground venison (I used elk!)
• 1/2 lb ground pork
• 1/2 cup breadcrumbs
• 1/4 cup diced onion
• 2 cloves garlic, minced
• 1 egg
• 2 tbsp Worcestershire
• 1 tbsp Dijon mustard
• 1 tsp smoked paprika
• 1 tsp salt
• 1/2 tsp pepper
• 1/2 tsp dried thyme

GRAVY INGREDIENTS
• 2 tbsp butter
• 8 oz baby bella mushrooms, sliced
• 1/2 small onion, diced
• 2 cloves garlic, minced 
• 2 tbsp flour
• 1 1/2 cups beef broth
• 1/2 cup heavy cream
• 1 tbsp Worcestershire
• 1 tsp Dijon mustard
• Salt & pepper

INSTRUCTIONS
1️⃣ Mix venison, pork, breadcrumbs, onion, garlic, egg, Worcestershire, Dijon, and seasonings. Roll into 1½-inch meatballs.
2️⃣ Sear in a skillet until browned; remove and set aside.
3️⃣ Add butter, mushrooms, and onion to the pan. Cook until browned. Add garlic and cook for one minute. Stir in flour.
4️⃣ Whisk in broth, then cream, Worcestershire, and Dijon. Simmer until thickened.
5️⃣ Add meatballs back in and simmer 10–12 min until cooked through.
6️⃣ Serve over mashed potatoes, rice, or egg noodles.

Venison Sausage and Cheese Stuffed Pretzel Bites w Venison Sausage and Cheese Stuffed Pretzel Bites with a melty beer cheese for dipping- so easy and perfect for any game night or holiday party coming up!

Ingredients
Filling:
1 lb Italian Venison Sausage
1 cup Shredded Sharp Cheddar Cheese

Pretzel Bites:
1 can refrigerated pizza dough
10 cups water
⅔ cup baking soda
Coarse salt, for topping
Melted butter, for brushing

Beer Cheese Dip: (Optional) 
2 tbsp butter
2 tbsp flour
¾ cup beer (lager or amber preferred)
¾ cup milk
1 ½ cups shredded sharp cheddar cheese
2 tsp Dijon mustard
½ tsp smoked paprika
Salt and pepper, to taste

You Will Also Need:
@bearmountainbbq tailgate pellets (for a perfectly balanced smoke)

Instructions
1. Brown the venison sausage in a skillet over medium heat, breaking it apart as it cooks. (If you think your premade venison sausage is underseasoned, add in 1-2 teaspoons all purpose seasoning). Remove from heat, drain, and stir in shredded cheddar while warm.
2. Unroll the pizza dough and cut into 2-inch squares. Add a spoonful of the sausage mixture to the center of each, fold, and pinch the edges to seal into a ball.
3. Bring water and baking soda to a boil. Once boiling, drop the pretzel bites in for 30 seconds, then remove with a slotted spoon and place on parchment paper or a grill pan.
4. Preheat your pellet grill to 400°F with Bear Mountain Tailgate blend Pellets.
5. Brush each bite with melted butter, and place into your grill for and cook for 20–25 minutes until golden brown.
6. While they cook, either on the stove top or on your grill, melt butter in a saucepan and whisk in flour for 1 minute. Slowly add beer, then milk, whisking until thickened. Remove from heat and stir in cheddar, Dijon mustard, smoked paprika, and a pinch of salt and pepper until smooth. 
7. Brush the pretzel bites with more melted butter and sprinkle with flaky salt when they come off the grill. Serve hot with the beer cheese dip (or any mustard you love)
