Ingredients
- 1–2 tablespoons oil, divided
- 1 pound ground venison
- 1 packet taco seasoning
- ¼ cup water
- 8 small flour tortillas
- 2 cups shredded cheese, such as Mexican blend, Monterey Jack or Pepper Jack

Instructions
- Heat a cast iron skillet or griddle over medium-high heat.
- Add 1 tablespoon of oil and the ground venison. Cook until browned, breaking it into crumbles as it cooks.
- Stir in the taco seasoning and water. Simmer for 2–3 minutes, until the meat is well coated and most of the liquid has evaporated. Remove the seasoned venison from the skillet.
- Add the remaining oil to the skillet. Place one tortilla in the skillet. Sprinkle a pinch of cheese over half of the tortilla, add a scoop of venison, then top with a little more cheese. Fold the tortilla over.
- Cook for 2–3 minutes per side, until the tortilla is crispy and golden and the cheese is melted. Repeat with the remaining tortillas and filling.

Notes
Cheese: Mexican blend, Monterey Jack and Pepper Jack all work great. Pepper Jack is especially good if you want a little extra kick.
Tortillas: Small flour tortillas work best because they crisp up quickly and are easy to fold. You can experiment with corn tortillas, but the texture will be different.
